Just realised your presents today seem to be food related (or at least the prompts were)!
The second part of your present to unwrap is a bit of fun around a recipe that I enjoy making and friends seem to enjoy eating so I thought you might enjoy it too!
ROCKY ROAD
“Tell me again why we are doing this?”
“It’s Christmas and we have to take something, and besides they always make things for us so I thought it would be fun to have a go.”
“Ok so how small do I have to cut the pieces of marshmallow? Come to think of it why couldn’t you buy small ones?”
“The corner shop only had this size so you’ll have to cut them into four. I can’t stir the chocolate while the butter melts with the golden syrup and cut the marshmallows and you did offer” sighed Bodie.
Doyle finished cutting the marshmallows and looked at the scissors he had been using. “Think I’ve ruined them mate”
“Hot water and a squirt of fairy liquid and they’ll be as good as new!”
“Hark at Mister Domestic!” chuckled Doyle.
“Stop mucking about and cut up the cherries. I did the nuts before you arrived”
“Yes Mum! Sorry Mum!”
Bodie stopped stirring the mixture that was now melted in the pan and, placing it on the side, he joined Doyle by the sink and peered at the bowl containing the collection of misshapen marshmallows and cherries. “Oh well they will have to do I s’pose.”
Before Doyle could say anything else he took the bowl and tipped it into the chocolate mix. He stirred it all together, added the nuts and then tasted it.
“There’ll be none left if you do that!” Bodie grinned but ignored him. “Pass me that tray thingy mate. Now all we have to do is shove this in that and put it in the fridge for a few hours.”
“Shove! Don’t you mean pour? Oh I see what you mean it is a bit thick to pour in!”
If you would like the recipe the lads were making here it is:
Rocky Road (Slightly adapted from a recipe in Nigella Christmas by Nigella Lawson)
175g soft unsalted butter
200g dark chocolate, broken into pieces
200g milk chocolate, broken into pieces
4 tablespoons golden syrup
200g amaretti biscotti (the hard ones), crushed into crumbs and lumps
125g marshmallows, large pink and white ones, cut into 4 each (very fiddly sometimes I buy the small ones to save time)
150g glace cherries
150g brazil nuts (I use Pecans as I think they taste nicer)
1. Heat the butter, chocolate and golden syrup in a heavy-based saucepan over a gentle heat, then cool a little (I have used the microwave for this bit)
2. To the melted chocolate mixture add the biscuit crumbs, marshmallows, glace cherries and nuts; fold in well to coat everything.
3. Tip the mixture into a 13 x 9" baking tin and smooth the top the best you can with a spatula. Refrigerate for about two hours or overnight.
4. To serve, cut into 24 bars.
It is very sweet so I cut it into very small pieces. I use Galaxy choc including one that already has biscuits (cookies) in it but you can use any chocolate. You can use other biscuits and not the amaretti ones. (Usually depends whether the amaretti on are special offer at my local supermarket).
